Wildlife garden bylaw to lie fallow until 2011

 Wildlife gardeners will have to wait another year before the city changes its bylaw to allow tall grasses and wildflowers to flourish in people's yards.

"Based on our resources and current workloads, we won't get to it this year," said Christine Hartig, a policy officer in the city's bylaw and regulatory services branch.

But Capital Councillor Clive Doucet said the decision to delay the bylaw changes was made without councillors' input, and he wants the gardening matter dealt with this year, as planned.

"We were told by senior staff it would be ready to go this spring," Doucet said. "Why wouldn't you want to straighten it out this year? It's not rocket science. ... It's so simple."

Students grow own vegetablesLaura Dicks loves cooking with organic produce, but she’s sick of paying high costs at grocery stores.  “It tastes better, but I can’t really afford it,” Dicks said.

This semester the history senior, along with 25 other community members, rented an organic plot at the Hill Farm Community Garden.

The garden, located between East Campus Apartments and the Lod Cook Alumni Center, is a 1/4-acre plot within the 5-acre Hill Farm. It consists of individual and community plots, a section designated for an organic gardening class and a small orchard tended by an agriculture professor.

The Hill Farm has existed since the 1920s, but the garden began about 10 years ago, said faculty adviser Carl Motsenbocker. Hill Farm Community Garden President Kenneth Kuchita said few students have seen the garden.

Reaping from high value vegetables

Ruth Nashaba has grown vegetables for 15 years. This has been on a small scale, using  basic methods and poor seeds until the intervention of the district agricultural department. In 1992, Nashaba and her village mates formed a group, Kyabaiba Abamwe Women Group in Nyabikungu Parish Rwampara, to escape poverty by pooling resources together  and using proceeds from their small gardens of vegetables. However the income was not sufficient because of poor farming methods.

“We were using poor seedlings and poor farming methods of draining the wetland without adding manure to the soils. Whenever it rained, we would lose some of our crops because of cultivating in the middle of  the wetland until the intervention of extension workers,” she recalls.  They were taught how to use the wetland sustainably by using the periphery of the wetland. They were also taught the use of the existing rivulets to irrigate their crops using watering cans and taking water to their gardens without draining the water away.

Vegetable Soup, Hot Off the Grill

Andy and I spend a lot of time grilling outside, mostly because we don’t have air conditioning or much counter space in our kitchen. Often, we get overzealous and end up with a pile of leftover zucchini, onions, asparagus, potatoes or whatever. The next day, the once sprightly vegetables have become sodden and limp. So I’ve been looking for alternatives (veggie spread? dips?), and have fallen in love with the ease and simplicity of grilled vegetable soup.

I usually start with garlic and oil and then add mirepoix (the “holy trinity” of French cooking, a mix of diced onions, celery and carrots), sautéing until tender. While that’s softening, I chop up whatever veg we’ve got on hand. I’m usually not too picky about the ratio of the different vegetables, but I do avoid anything that’s too bold or doesn’t play well with others (I’m looking at you, beets). Generally, if they work together on your plate, they should work in the pot. I stir for about five minutes, allowing the pieces that are still firm to cook until completely soft.

No-dessert,-mom,-just-moreA pair of giant agriculture companies are trying to do what Popeye couldn't – make spinach and some other vegetables taste better.

Monsanto Co. and Dole Food Co. Inc. announced Tuesday that they have launched a five-year project to produce new varieties of spinach, broccoli, cauliflower and lettuce. The objective is to “improve the nutrition, flavour, colour, texture and aroma of these vegetables,” the companies said.

“The idea of course is to develop vegetables with characteristics that consumers want,” said Monsanto spokeswoman Riddhi Trivedi-St. Clair. “For example, one of the things that we often hear is people prefer iceberg [lettuce] to romaine because of its texture. So, do we need to develop romaine that has the texture of iceberg?”

Grilled vegetables with balsamic vinaigrette

Summertime is the season of cooking outdoors. There is no celebration that embodies the spirit of summer more than the BBQ. When the weather warms and the days last longer the urge to fire up the grill becomes like second nature.
To cook over an open flame is something that really touches the evolutionary history of humans. The charred taste of food cooked directly by hot coals cannot be replicated, there is a flavor in the embers and the smoke that transmits to the food.
Grilled squash is like a summer past time. In our days of modern agriculture, we seem to forget the seasonal nature of our produce. Farmer's markets help to remind us that sustainability comes with a price—but they also let nature dictate what we are meant to cook and eat instead of the other way around.
A simple vinaigrette is the most I will use to marinate vegetables for the grill. When deciding how to slice the veg, I use a simple logic: design the shape so that the pieces won't fall through into the fire. Eggplant I cut into fat rounds and zucchini, into long strips. There are countless varieties of squash available and anything that's not too leafy works great on the grill. Try peppers, fennel, members of the cabbage family, mushrooms, and even fruit.
